Smoky, toasted cashew dip

Cashews are a regular favourite in our house, super moreish, they work in so many dishes and can be toasted or roasted to provide some really interested pre-dinner treats or just snacks to give energy throughout the day. We love adding them to curries and asian meals like noodles as they not only bulk the flavour mix out but also add texture where needed. They are especially awesome on a biryani!

Cashew nuts are not just a delicious and versatile snack; they also offer a variety of health benefits. Cashew nuts are packed with essential nutrients, including vitamins (vitamin E and B-complex vitamins), minerals (magnesium, zinc, iron), and healthy fats that support overall health. Cashews are a good source of monounsaturated fats, which are heart-healthy and can help reduce the risk of heart disease when consumed in moderation. Cashews have also been shown to contribute to healthy skin by promoting collagen production.

This dip takes about 20-30 minutes to make at the most, and makes enough that you will be able to get a few snack sessions from one bowl. Take care to keep an eye on them when toasting, as they catch quickly. Also watch the water content, add it a few splashes at a time otherwise you might make the dip too wet. Ideally it needs to be thick and smooth in texture, to make it easy to scoop onto carrot!

Ingredients:

  • 140g x Cashews

  • 140ml x Water (add as necessary, not all at once!)

  • 1 tsp x chilli, flakes or powder is fine

  • 1 tsp x paprika

  • 1 1/2 tsp x sugar

  • Carrots/Cucumber/Grissini/Crisps - to dip!

Directions:

  • Pour the nuts into a pan and toast over a medium heat. You can add a small amount of oil (spray not pour) as this may help. Keep an eye on the cashews, they will burn the moment you look away. Allow to cool

  • Put all of the ingredients into a blender and whizz until smooth. You’re looking for a smooth consistency with a little bit of bite, so be careful when adding the water and don’t over blend. I tend to pulse blitz until about right

  • Chop/unwrap/open your dipping accompaniments

  • Serve!
